Spreading the loaves: Small Helotes bakery serving up big sourdough breads | Neighborhood Eats

Customers can also order from a selection of baked goods and sweet pastries.

HELOTES, Texas — Flour, water and salt.

It's a winning combination of ingredients for one baker in Helotes. Her simple recipe for sourdough, which she learned from a baking book, is scoring high praise from customers in the Old Town of Helotes.

This week, Neighborhood Eats is checking out Spread The Loaves.

"It's just so magical to me to mix up a tub of flour, water, salt and sourdough starter and end up with this [bread]," said Sophie Jeffery, bakery owner. 

"[I got started] after that winter storm in 2021. I baked a lot of bread for friends and family who were having trouble finding groceries and I really realized I liked making bread in bulk. I just went with it! I was looking for a career at the time and just decided to jump for it."

We're glad she did! Jeffery showed us how she creates her sourdough. Before it enters the oven, she scores the bread, which tells the dough where it should expand. Then it's baking time! Water is poured into steam trays to keep the crust soft and stretchy before hardening off. Total bake time takes about an hour and voila! -- fresh loaves!

We also tried her focaccia bread which was TASTY! If you have a sweet tooth, we highly recommend her cinnamon rolls and cookies.

Spread The Loaves is located at 14743 Old Bandera Road, Helotes, Texas. The bakery is open Wednesday through Saturday from 9 a.m. to 2 p.m.
