Snow in San Antonio?
Unless there's a freak freeze, snow is a rarity -- that is unless you're at the Westin La Cantera Resort. This time of year the hotel transforms into a winter wonderland to celebrate Hill Country Holidays, a wonderland that celebrates fun activities and festive food.
Chef John Armstrong stopped by the Saturday Morning show to showcase some of the resorts good eats.
Toasted Coriander & Local Honey Glazed Ham

Ingredients
½ Cup Local Honey
½ Cup Coriander Spice Mix (see sub recipe)
1 Each Ham
1 Each Propane or Butane Torch
Method
Set oven to 350 degrees, place ham on a cooking rack and cook until internal temperature reaches 145 degrees. Take the ham out of the oven and baste it with local honey with a pastry brush all over the ham. (Be careful as the following steps include molten sugar and open fire) Carefully place honey basted ham on cake wheel for ease of even glazing on a cake wheel. Gently spin the cake wheel while dusting the ham with granulated sugar. Use a propane or butane torch to evenly melt the sugar. Then add a sprinkling of the coriander spice mix and another layer of granulated sugar and again evenly melt the sugar. You may repeat the last step as many times as you would like if you want a thicker glaze. This completes the glazing steps and your ham is ready to eat.
Coriander Spice Mix
Ingredients
1 Lb. Light Brown Sugar
3 Tbsps. Ground Coriander (toasted & ground)
2 Tbsps. Ground Cloves
2 Tbsps. Ground Allspice
2 Tbsps. Ground Ginger
Method
Toast coriander and other spices excluding light brown sugar in a sauté pan until fragrant and add to a spice grinder to grind together. Then mix with your light brown sugar and place in an airtight container until you are ready to use.
