The art of the tamale: It's all about the masa

Christmas without tamales is unheard of in San Antonio. Many order ahead and stand in long lines on Christmas Eve to get the large tins or cans (ABSOLUTELY don't confuse this with the small cans you get in the grocery store) from local vendors like Delicious, Tellez, Ruben's or Mi Casa.
But, for others, tamales are everyday comestible and a traditional culinary art.
