Dad’s Southwest Breakfast Burritos
 
Ingredients
1 package Jimmy Dean® Hot Roll Pork Sausage
1 red bell pepper, chopped
8 eggs, lightly beaten
1 cup salsa
1/4 cup chopped cilantro (optional)
8 8 -inch flour tortillas        
1 cup (4 oz.) shredded Mexican cheese blend
1 can (15 oz.) black beans, rinsed, drained
           Sour cream, additional salsa and chopped cilantro (optional)
 
Directions
Cook sausage and red bell pepper over medium-high heat, stirring frequently until meat is thoroughly cooked and no longer pink; drain sausage.   Add eggs and cook, stirring occasionally for 5 minutes or until no liquid egg remains.
Stir in salsa and cilantro, if desired; heat through.  Warm tortillas according to package directions.  Place ½ cup of sausage-egg mixture onto each tortilla, top with and about ¼ cup of beans and 2 tablespoon cheeses.  Fold in opposite sides of tortilla, then roll up burrito-style. Serve with sour cream and additional salsa and cilantro, if desired.
 
Yield:
Makes 8 servings (1 burrito each)
 
 
Zesty Fiesta Sausage Dip  
Ingredients
1 pkg. Regular Flavor Jimmy Dean® Pork Sausage
1 cup chopped onion
1 jar (16 oz.) yellow banana peppers, drained, seeded and finely chopped
3 pickled jalapeno peppers, seeded, finely chopped (about 1/4 cup)
16 oz. cream cheese, softened
1-1/2 cups seeded chopped tomato
1/2 cup finely chopped sweet red pepper
1/3 cup chopped fresh cilantro leaves (optional)
1/2 cup thinly sliced green onion tops (optional)
chips or crackers
 
Directions
In a large skillet, cook sausage and onion over medium-high heat, stirring frequently until meat is thoroughly cooked and no longer pink. Stir in banana peppers and jalapeno peppers; cover and cook 1-1/2 minutes. Reduce heat to medium, stir in cream cheese and chopped tomato; cook uncovered until heated through (about 5 minutes). Fold in red pepper; add optional ingredients if desired. Serve warm in a chafing dish, with chips or crackers for dipping. Garnish with additional diced tomato and cilantro or green onion if desired.
 
Yield:
Makes about 5-1/2 cups
