A Healthy Halloween!

H-E-B Plus! Healthy Halloween Meals

Monster Red Eye Chile

Prep Time: 30 min

Cook Time: 1 1/2 hrs

1½ lbs. H-E-B LEAN GROUND BEEF or GROUND TURKEY BREAST

1 Tablespoon HILL COUNTRY FARE CANOLA OIL

1 container (5 oz) H-E-B READY FRESH GO CHOPPED SWEET ONION

¼ cup HILL COUNTRY FARE CHILE POWDER

2 cans (14.5 oz) H-E-B SLICED STEWED TOMATOES, regular or no added salt

1 can each (14.5 oz each) HILL COUNTRY FARE PINTO & BLACK BEANS, rinsed

½ cup chopped CILANTRO

Directions:

1. Heat a large chili or saucepot over high heat for 3 minutes.  Add the oil and ground beef or turkey.  Stir-fry the meat 4 minutes and break into small crumbles with a cooking spatula.  Add the chopped onions and stir-fry for 3 more minutes.  Add the Chile Powder and green chilies; stir-fry for 1 more minute. 

2. Stir in the sliced tomatoes with their juice and the rinsed beans.  Bring the chili to a boil, reduce heat to low, cover and cook for 15 minutes or until chili is thick.  Season the chili to taste with salt and fresh cracked black pepper.

Makes: 8 servings

 

Coffin In a Canoe Sandwiches

Prep Time: 15 min

16 slices H-E-BUDDY WHITE WHEAT BREAD*

8 oz. H-E-B FAT FREE SLICED DELI HAM or TURKEY

1 bag (8 oz) H-E-B SHREDDED CHEDDAR, reduced fat or fat free

1/2 cup H-E-B MAYONNAISE

8 leaves H-E-B READY FRESH GO LETTUCE SCOOPS

8 H-E-B PIMIENTO STUFFED OLIVES, sliced

Directions:

1. Cut bread into coffin shapes and spread 1 teaspoon Mayonnaise on each half.

2. Layer 2 slices of folded sliced ham or turkey & 1 Tablespoon shredded cheese on 8 of the coffin shaped bread slices.  Top with the remaining coffin shaped bread slice. Use mayonnaise on back of olive slices and place on bread decorate the top of the coffin shaped bread: two olive slices for eyes and one olive cut in half for the mouth.

3. Place each coffin sandwich in a lettuce scoop and arrange on a large platter. 

Makes:  8 sandwiches

* You can toast the bread if desired.

 

Salty Bones Salad

Prep Time: 15 min

1 JICAMA, peeled and cut into matchstick slices

1 bag (10 oz) MATCHSTICX CARROTS

1 cup shredded CABBAGE

Juice of 1 LIME

SALT & PEPPER to taste

Directions:

Combine the jicama, carrots, cabbage and lime juice in a large salad bowl.  Season the salad

With salt.  And pepper to taste and toss to combine.

Makes: 8 servings

 

Red Hot Cinnamon Baked Apples

Prep Time: 10 min

Cook Time: 4 min

4 GRANNY SMITH or PINK LADY APPLES, washed & cored

¼ cup HILL COUNTRY FARE RED HOT CINNAMON CANDIES

4 Teaspoons H-E-B RAISINS or DRIED CRANBERRIES

¼ cup H-E-B LIGHT NON-FAT VANILLA YOGURT

Directions:

1. Place cored apples in a microwave-safe dish.

2. Stuff each apple core with 1Tablespoon cinnamon candies and 1 teaspoon raisins or cranberries.

3. Cover dish with plastic wrap and microwave on High power for 8 minutes.  If your microwave oven does not have a rotating bottom, turn the baking dish a half turn after 4 minutes of cooking and then microwave 4 more minutes.

  1. 4. Carefully remove from the microwave oven with potholders.  Let apples cool 5 minutes and top with 1 Tablespoon Vanilla Yogurt

Makes:  4 Servings

 

Orange & Creamy Spooky Punch

Prep Time: 5 min

Freeze Time: 15 min

½ gallon H-E-B CREAMY CREATIONS VANILLA ICE CREAM, regular, no added sugar or low fat yogurt flavors

4 cans (12 oz each) H-E-B ORANGE BURST SODA, regular or diet

1 bottle H-E-B MANDARIN ORANGE SPARKLING WATER WITH SPLENDA

8 cups ICE CUBES

1 can (12 oz) HILL COUNTRY FARE MANDARIN ORANGES, drained

Directions:

1. Place H-E-B Creamy Creations Vanilla Ice of choice in a large punch bowl.  Add the Orange Burst soda and mandarin Orange Sparkling water and stir.

2. Add the ice cubes and garnish the punch with Mandarin Orange sections. 

Makes: 16 servings

Note: For a Halloween treat, top each punch cup with a green Gummy Worm.

 

Whole Grain Cinnamon Cookies

Prep Time: 15 min

Chill Time: 30 min

Bake Time: 12 min

¾ cup H-E-B BUTTER, softened

¼ cup H-E-B BROWN SUGAR

¼ cup HILL COUNTRY FARE 0 CALORIE SUGAR REPLACEMENT

1 large H-E-B EGG YOLK

1 cup H-E-B BAKER’S SCOOP ALL PURPOSE FLOUR

¾ cup H-E-B BAKER’S SCOOP WHOLE WHEAT FLOUR

¾ teaspoon HILL COUNTRY FARE BAKING POWDER

1/8 teaspoon H-E-B SALT

 

Dusting Sugar:

¼ cup H-E-B SUGAR

½ teaspoon HILL COUNTRY FARE GROUND CINNAMON

Directions:

1. Combine the butter, brown sugar, 0 Calorie Sugar Replacement and egg yolk in a mixer bowl.  Beat with an electric mixer on medium speed for 2 minutes.  Add the flour, baking powder and salt and beat 1 more minute or until a dough forms. 

2. Place the dough in a bowl, cover with plastic wrap and refrigerate for 30 minutes.                       

3. Heat oven to 350°F.  Set out 2 ungreased cookie sheet pans.

4. Roll the dough out on a floured surface to ¼ inch thickness.  Cut out Halloween Cookies and place on the ungreased cookie sheet pans.  Bake the cookies 10 to 12 minutes or until edges are lightly browned.  Place cookies on wire racks and dust with the powder sugar cinnamon mixture.  Cool cookies completely. 

Makes: 3 dozen small cut-out cookies
