Today we’re making Easy Arroz con Pollo!
Ingredients:
1 package of Adolphus Rice Latin Selections Fiesta Tomato and Chipotle rice
2 tsp Carbonell Special Selection Extra Virgin Olive Oil
½ green bell pepper, chopped
½ small onion, chopped
1 cup chopped tomatoes
½ cup frozen peas
2 cups cooked chicken, chopped
1 lime cut in wedges
Preparation:
1. Latin Selections Fiesta Tomato and Chipotle Rice according to package directions
2. While the rice is cooking, add the olive oil, peppers and onions in a sauté pan. Cook at medium low heat for about 10 minutes. Add tomatoes. Stir well. Then add peas and bring to a medium boil. Turn down heat and cook for another 3 minutes.
3. Add the cooked chicken and continue cooking for 5 minutes.
4. When the Latin Selections Fiesta Tomato and Chipotle Rice is ready, mix in to pan, combining all ingredients. Cover, turn off heat and let rest for 5 minutes.
5. Serve warm with a squeeze of lime.
