It’s National Nutrition Month and what better way to celebrate than to invite one of our favorite chefs, Samuel Plont! He may be only 12 years old, but he sure knows how to cook some delectable meals!

Cauliflower Crust Pizza Recipe:

Ingredients (for one 7-9" crust):
•1 packed cup (about 1/3-1/2 head) cooked, riced cauliflower (see instructions below)
•1 cup shredded mozzarella (or Italian blend cheese)
•1 egg, beaten
•1 tsp dried oregano
•1 clove garlic, minced
•1 tsp fresh basil, chopped finely
•1/2 tsp salt
•pizza sauce
•toppings of choice}

{Chicken Stir Fry with Cauli-Rice
•1 pound boneless skinless chicken breast (cut into 1" pieces)
•1 Tbs +1 tsp vegetable oil (can substitute olive oil)
•2 tsp minced fresh ginger
•1-2 tsp minced garlic
•salt & pepper, ground ginger, and garlic powder (to taste)

Notes: 3-4 Cups of Veggies to choice; or purchase a large bag of frozen sir fry veggies

·½-1 cup small broccoli florets

•½ cup sliced mushrooms
•½ cup snow peas
•½ cup sugar snap peas
•½ cup shredded carrots
•½ cup sliced onions (substitute green onions if preferred)
•½ cup sliced leeks
•sesame seeds (for garnish, if desired)

·For the Stir Fry Sauce (can use a premade sauce, if preferred):
•¼ cup fish sauce
•¼ cup low sodium chicken broth (can use water)
•1 tsp sugar
•2 tsp toasted sesame oil
•1 tsp soy sauce (can substitute coconut aminos)
•1 tsp cornstarch
•1 Tbs water
